Is if possible to catagorize an opp into multiple categories?

Currently, it is not possible in the WEC Servant extension. However, we are open to expanding the functionality of the extensions. Can you give an example of what you would like to do with multiple categories? That would be helpful.

I don't quite have an example, my client just wanted to put some items in more than one category... I'm guessing it was possibly something along the lines of a helper needed to serve in "Outreach" to "Adults". I can just say no.

It all depends on what you mean by category. If category is a "ministry" where there is an "Outreach Ministry" and "Adult Ministry" and you want to put it under both, then the WEC Servant Connector does not support that.

However, if you setup skills/interests so that there is "Outreach" and "Adults" as the interests selected for a specific opportunity like "Outreach To Adults in Downtown XYZ", then it definitely does support that. You can have up to 8 skills/interests to match with a given opportunity. You can setup the skills/interests separately, and then as you build the servant opportunities, you just select which skills/interests you want to match with each one.
